Green Labaneh


Our green labaneh is inspired by a traditional method used to render an indigenous herb, Hweirneh, palatable.At the restaurant, we’ve adapted this technique using many different kinds of bitter seasonal greens. We emulsify these pressed greens with olive oil, and then fold this mixture into whipped labaneh to give the final dish a smooth and silky texture.


Eat it with bread, or on toast with eggs, as a base to a green salad, as a dip for fried mezze or even in the place of yoghurt in fetteh.
